Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pans.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt. In a separate container, combine the eggs, milk, oil, and vanilla extract. Gradually incorporate the liquid components into the dry ones, stirring until they are just blended.
  3. Divide the batter among the prepared pans and bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then move them to a cooling rack to cool down completely
  4. To make the frosting, combine the egg whites and sugar in a heatproof bowl set over a pot of simmering water. Whisk until the sugar is completely dissolved, then remove the bowl from the heat and beat the mixture on high speed until it cools and forms stiff peaks.
  5. Gradually add the butter, one piece at a time, beating well after each addition. Beat in the vanilla extract.
  6. To assemble the cake, level the tops of the cakes with a serrated knife. Place one layer on a cake stand and spread a layer of raspberry jam on top. Repeat with the remaining layers.
  7. Frost the entire cake with a thin layer of the Swiss meringue buttercream to create a crumb coat. Chill the cake for about 30 minutes, then frost the cake with a final layer of buttercream.
  8. Roll out the fondant to a thickness of about 1/4 inch and carefully cover the cake, smoothing out any wrinkles or air bubbles.
